Saturday before Beryl came to visit, we had a cookout here at Hidden Harbor Marina. Marina supplied burgers and dogs and everyone brought a dessert or side. It was a great time and even had national tour star Brent Byrd come and play for us.

We even had some guys from the marina who sat in with Brent for a few tunes. What a great evening!

It was nice to see so many varieties of food from so many people. I brought a southwestern rice dish that had rice, beans, corn, lime and some spice.

I have to say one of my favorites, and out of my character, was the Ukrainian Potato Salad (recipe below in a photo) brought by our neighbor. It had a beautiful red color from beats and was a great change of pace from our normal food. I loved it. Very refreshing and healthy. I had to get the recipe!

He let me borrow the book and after looking through, there were so many great looking dishes I had to stop taking pics and just buy the book for myself. It is a book of meatless dishes from around the world. 488 pages of great looking things. I thought this would be great for when we start to cruise because it is all meatless so it is stuff we would sometimes just have right on the boat. Can’t wait to start making some things out of it!
