Today for lunch we had couscous. Now you may say that is not very exciting but it was so tasty.
Cranberry Couscous
1c Israeli couscous
Dried cranberries
Fresh garlic clove – minced
Butter
Salt
Pepper
Basil (fresh if possible)
Crushed red pepper
1.5c Water
Boil water and cranberries, butter and fresh minced garlic. Add other seasoning and couscous. Cover, bring to boil and then simmer for 8-10 minutes till water is absorbed. Serve warm. Feeds two people. Would be great served as a side for fish.
Could also substitute regular couscous just add couscous cover take off heat and let sit for 5 min. Also use 1:1 on water/couscous
